Easy Make-ahead Breakfast Casserole or Muffins

Easy Breakfast casserole
Can be made in muffin pan but the glass casserole dishes are easier to clean.

12 eggs
1-2 cups of your favorite shredded cheese. This depends on how cheesy you like it. I love organic cheddar cheese for this.
1 lb. Of breakfast sausage of your choice
Salt and pepper
☆Optional changes: you can change out sausage for ham, you can add veggies such as mushrooms, onions, peppers, spinach (well drained) any favorite omelet add ins.

Preheat oven to 400

Spray your pan. (I use chosen foods avocado oil spray.)

Cook sausage breaking it apart in small crumbles for easier distribution. I like some browner pieces for more flavor. Salt and pepper as you cook.

Whisk eggs until completely combined pale yellow color. Salt and pepper

Pour drained sausage in to pan then add egg mixture, sprinkle shredded cheese on top

Bake for 20-25 minutes. Make sure middle is done. Muffins about 18-20 minutes is usually good. They will rise up when done.

Casserole cut in squares. You can freeze or refrigerate for 5 days.
